University of Pennsylvania – UPenn Sushi Spot Renovation

The Sullivan Company completed the transformation of an existing retail storefront into the UPenn Sushi Spot, a vibrant new dining destination located on the University of Pennsylvania campus. The project involved a full interior and exterior renovation to accommodate a modern, fully operational food service establishment within a highly constrained footprint.

Scope of work included a complete gut renovation, followed by installation of new partitions, ceilings, polished concrete flooring, and specialty finishes designed for compliance with food service standards. The project also featured the installation of commercial kitchen and food service equipment, a renovated ADA-compliant restroom, and upgrades to all major systems, including a new mechanical system, electrical panel and lighting, and associated infrastructure.

Exterior improvements included a new storefront glazing system and layout, a custom ADA-accessible ramp, and the installation of a new exterior awning.

This project was delivered on an extremely aggressive schedule, with the project team working overtime and up to seven days a week to meet the University’s deadline. Despite the tight timeline, the team successfully navigated several key challenges, including the installation of complex kitchen systems within a very limited space, requiring detailed planning and creative solutions to maximize functionality.

Additionally, construction took place adjacent to occupied academic and retail spaces, necessitating careful coordination to minimize disruptions and maintain safety and access throughout the duration of the project. The successful completion of the UPenn Sushi Spot reflects The Sullivan Company’s commitment to delivering high-quality results under demanding conditions.
